Penicillium candidum and boomy rind soft cheeses – a love story
Happy Valentine’s Day cheese lovers! A fitting day to learn more about Neufchâtel, heart-shaped cheese from Normandy.
Legend relates that during the Hundred Years’ War (1337 – 1453), the French dairymaids of Neufchâtel fell in love with their English occupants. As a result, they began to mold the cheeses in the shape of a heart to express their love. Ever since, Neufchâtel cheese has been known for its characteristic heart shape, white bloomy rind, and velvety, creamy interior.
Bloomy rind soft cheeses such as Neufchâtel are most of the time inoculated or sprayed with Penicillium candidum cultures to directly impact their surface and taste. Not only do they optimize the surface appearance with a uniform bloomy white rind and enhance cheese flavor, they also reduce the risk of contamination with spoilage microorganisms and pathogens.
