World Milk Day

Ever heard of World Milk Day? Well, you missed it by a day, but rest assured you can celebrate it any time as we like to do at Lallemand. It was established in 2001 by the Food and Agriculture Organization of the United Nations to recognize the importance of milk as a global food, and to celebrate the dairy sector.

Used as fresh and storable nutritional foods from the early days of civilization, annual milk consumption is now estimated at billions of liters worldwide with a growing annual consumption per capita. Production wise, India is the largest producer with 22 percent of the global volume, followed by the United States of America, China, Pakistan and Brazil.

Milk products are highly diversified, from milk (fermented or not) to cheese, cream, and butter to name a few. Their production is almost entirely derived from cattle (81%), buffaloes (15%), goats (2%), sheep (1%) and camels (0.5%). Appreciated for their taste and nutritional features, these products are an essential component of our diets.
